What’s for dinner? Mushroom, tomato and red wine fusilli

A fine dining pasta of mushrooms, tomato and red wine. This fusilli recipe is perfect for a weeknight celebration dinner or date night. 

21 JUNE - WFD – Mushroom, tomato and red wine fusilli

Serves 2 

You’ll need: 1 packet Royco Sour Cream & Mushroom Sauce; 15ml margarine; 1 onion, chopped; 125g brown mushrooms, sliced; 30ml red wine; 1 clove garlic, crushed; 200g tomatoes, skinned and chopped; 5ml tomato paste; 30ml cream; black pepper, to taste; 150g fusilli pasta, cooked 

How to:  

Prepare Royco Sour Cream & Mushroom Sauce as per instructions on the pack.  

Heat margarine and fry onion and mushrooms. Add red wine and cook until liquid has reduced.         

Add garlic, tomato and tomato paste.  

Cover and simmer for 10 minutes.         

Add prepared sauce, cream and pepper.         

Serve with fusilli, freshly grated Parmesan cheese, Italian olive bread and a spinach salad.
