Holiday snack: Try this melt-in-your-mouth Portuguese style chicken liver recipe


500g chicken livers

4 Tbsp olive oil

1 large red onion, chopped

2 cloves garlic, crushed

3-6 small peri-peri chillies, chopped or your favourite peri-peri sauce to taste

1 tsp paprika

2 bay leaves

1 tsp salt

1 Tbsp chicken stock powder

juice of 1 lemon

crusty Portuguese rolls


Trim the livers of fat and sinew if necessary. Cut into 2cm pieces. Heat the oil in a pan and fry onions, garlic, chillies and spices until the onions are transparent. Add the livers and fry until just brown, stirring gently. Add bay leaves and chicken stock. Simmer over low heat for 5-8 minutes. Squeeze lemon over the livers and serve immediately with rolls or crusty bread.
