Kickstart your week with this really quick and easy to make dinner … but still taste great and satisfy your hunger.

21 MARCH -MEATLESS MONDAY - Chickpea veggie wraps

Serves 2

You’ll need: 1 Tin Koo Chickpeas, drained; 2 Tins Koo Mixed vegetables, drained; ½ cup Crosse & Blackwell Mayonnaise; ½ tsp curry powder, medium; 1 tsp lemon juice; salt and pepper to taste; 2 large flour tortillas.

How to: 

Add the chickpeas and the mixed vegetables to a bowl with the mayonnaise, curry powder, lemon juice, and salt.

Gently mix to combine.

To build the wraps, place the tortillas on a work surface and add 2-3 heaped tablespoons of chickpea mix to the centre of each tortilla.

Gently roll the sides of the tortilla to encase the mix and cut in half.

Serve with a side of roasted potato wedges.
